MY MANIFESTED CAT

This gem was inspired by one of my three, yes three, cats. She is well loved calico forest cat and is the biggest cuddler I have ever encountered. If she isn’t chasing her two sisters, she is pouncing on a yellow plastic twisted band we bought her. A true rescued tiger and I am so thankful to have her heart beating. This marmalade recipe also represents the exciting citrus season of the snowy winter. My bread making/loving boyfriend thinks it is to die for.

BLOOD ORANGE MARMALADE

Makes 1 pint

INGREDIENTS

| Marmalade |

  • 1/2 cup of sugar & 1/4 cup of sugar

  • 1 blood orange

  • 1 cup of fresh orange juice

  • 1/2 teaspoon of salt

  1. STEPS
    Peel the blood orange skin into strips approximately 1/8 to 1/4 inch wide. If you cannot get them this thin, slice the strips into tiny ribbons. Cut the orange into round slices.

  2. Place 1/2 cup of sugar, blood orange slices, juice, and salt into pot. Bring to a boil on medium high heat and then simmer on low heat for 30 minutes.

  3. Add in 1/4 cup of sugar and bring back up to a boil on medium heat. Allow to cook for 10 minutes.

  4. Allow to cool and store by either canning or pouring into an air tight container. Store in the fridge for up to a month!

  5. Spread on toast and enjoy!
